Grilled Stuffed Portobello Mushrooms

We love summer grilling when it's sizzling out there. And we have so many favourites like grilled curry & lime pork kabobs, grilled curry pork burgers, and tin foil packets that are oh-so-easy for grilling!
But if you are looking for a delicious vegetable recipe to grill for main course or side dish, than look no further because this here dish fits the bill perfectly!
Grilled Stuffed Portobello Mushrooms are so yummy and very filling. But we are mushrooms lovers in our family...so mushrooms of any kind are delicious to us!
This is a very versatile dish as it can eaten as a main course, served burger style in a bun or as a side dish where they could be cut in two.
And although they take a bit of preparation, the result is worth it!
Stuffed Portobello Mushrooms
{serves 4}

Ingredients:
4 portobello mushrooms
1 tablespoon olive oil
4 tablespoons balsamic vinegar or vinaigrette
3 cups spinach leaves, chopped
1/2 red pepper, diced
1 clove garlic, crushed
1/2 feta cheese, crumbled
2 tomatoes, diced
1 avocado, diced
basil leaves, finely sliced
salt & pepper to taste

To make:
1. Gently remove gills and stem from portobello mushrooms so that there is a cavity for filling. {I used a small knife to cut out the stem and a grapefruit spoon to remove the gills.} To each portobello mushroom, add 1 tablespoon of balsamic vinegar or vinaigrette. Let mushrooms marinate while the stuffing is prepared.
 2. Add 1 tablespoon of olive oil to a frying and heat. Add spinach, red pepper  and garlic and cook until spinach is bright green and red pepper is slightly soft. {You can also add diced onion or diced green onion if you wish.}
3. Add cooked spinach mixture to mushrooms on top of the balsamic marinate.
4. Add tomato, avocado and feta cheese. Sprinkle with basil leaves and add salt & pepper to taste.
5. Add to grill on medium heat and grill for 15 minutes or until heated throughout, golden brown and cheese is melted.
Remove from grill and serve. I served our grilled stuffed mushrooms as a main course with this delicious rainbow salad for a meatless meal. 
So, so good!
These mushrooms make an absolutely delicious dish to serve for summer grilling season!
